Is softened water or filtered water better for a coffee machine?
Short answer
Filtered water is better for the cup, softened water for the boiler. Ion exchange replaces calcium and magnesium with sodium, which protects against scale but pushes sodium far above the ten milligrams per litre brewing target. Carbon filtering removes chlorine and leaves hardness untouched.

How does ion exchange actually work?
Each divalent ion in the water — calcium or magnesium — is replaced by two sodium ions. Hardness therefore falls while total dissolved solids does not fall correspondingly, because sodium has taken the place of what was removed. The water is softer by every hardness measure and higher in sodium by the same exchange.
Why does the added sodium matter?
The brewing standard asks for sodium at or near ten milligrams per litre, which is low. Softened water routinely sits well above that. Sodium alters the perceived balance of sweetness and acidity, so water that now looks ideal on a hardness test can still produce a worse cup than the hard water it replaced.
Is there a way to have both?
The common approach is to soften only the hot water line feeding appliances and leave the drinking and brewing tap unsoftened, or to bypass a portion of the supply so some mineral content survives to the kitchen tap. The World Health Organization describes both arrangements. It costs a plumbing change rather than a compromise.
