Is softened water okay for making coffee?
Short answer
Not ideally. Ion-exchange softening swaps each calcium and magnesium ion for two sodium ions, so hardness falls while sodium rises. The brewing standard wants sodium at or near ten milligrams per litre, and softened water typically sits well above that. It protects the machine, not the cup.

What softening actually changes
Each divalent ion is replaced by two sodium ions. Hardness falls on every measure, which is the intended effect and genuinely does reduce scaling in pipes, fixtures and water heaters. What it does not do is reduce total dissolved solids, because sodium has taken the place of the calcium and magnesium removed.
Why the sodium is the problem
Sodium shifts the perceived balance of sweetness and acidity, which is why the brewing standard holds it near ten milligrams per litre. Softened water routinely exceeds that comfortably. The result is water that passes a hardness test and still makes a worse cup than the hard water it replaced.
The usual compromise
Soften only the hot water line feeding appliances and leave the kitchen tap unsoftened, or bypass part of the supply so some mineral content reaches the tap you actually brew from. Both arrangements are described in the WHO guidance and both cost a plumbing change rather than a trade-off in the cup.
